GOODY FOR GOODIES
Crock Pot Soup
Chuck roast about 2-3 1/2 lb. cut in small chunks
5 medium potatoes -- diced
5 carrots -- diced
1 large onion -- diced
1 stick celery -- chopped
1 can tomatoes
1 small can corn
1 small can green beans
1 head Chinese cabbage cut one inch slices (sideways)
Rough chop, doesn't have to be perfect.
Salt and pepper to taste
Put this all into the crock pot and turn on high until the mixture starts to boil.
Turn on low and cook all day. Serve with crusty rolls.
Dried beef is also known as beef jerky.

CROCK-POT CONTINENTAL CHICKEN
1 pkg. Dried beef 8 Chicken breast halves Without skin -- boned 8 slices Bacon 1/4 c Flour 1/4 c Sour cream 1 can Mushroom soup -- undiluted
On bottom of greased crock-pot, arrange dried beef. Wrap each piece of chicken with a strip of bacon and lay on top of dried beef. In a small bowl, blend sour cream and flour, add soup and mix thoroughly. Pour mixture over chicken. Cover and cook on low, 8 to 10 hours (or 3 to 5 hours on high heat). Serve over hot noodles.

Sweet & Sour Chicken Crock Pot
1 Carrot; cut in pieces
1 Green pepper; cut in pieces
1 Med Onion; quartered
2 tbsp Tapioca; quick-cooking
4 Chicken breasts- boned, cut
8 oz Pineapple chunks; canned drained
1/3 c Dark brown sugar; firmly packed
1/3 c Red wine vinegar
1 tbsp Soy sauce
1 tsp Chicken bouillon; instant
1/2 tsp Garlic powder
2 tbsp Ginger-root; fresh, minced
1 tsp Dried cilantro or 10 leaves
Rice; hot cooked
For crock-pot cooking put veggies in bottom of crock-pot.
Sprinkle tapioca over vegetables. Place chicken atop veggies.
Combine all ingredients except rice in a small bowl. Pour over chicken. Cover
crock-pot and turn to low and cook for 8-10 hours. Before serving make rice. Serve
over rice. Leftovers can be reheated in microwave.
To cook in oven put vegetables in bottom of a greased pan.
Sprinkle veggies with tapioca. Add chicken to pan. Combine all other ingredients
except rice in a small bowl. Pour over chicken.
Cover pan tightly with foil. Bake in 300 deg. oven for 2 hours. Before serving make
rice. Serve over rice. Leftovers can be reheated in microwave.
*You can also use 2 T. chopped candied ginger.

5 med Eggs, to 6
1/4 tsp Salt
1/8 tsp Nutmeg
1/4 tsp Cayenne
2 c Whipping cream
1/3 c Onion, minced
1/3 c Tomatoes, minced
1/3 c Canned chilies, diced (optional)
1 Unbaked pie crust
1 1/2 oz Cheddar cheese, shredded
1 1/2 oz Jack cheese, shredded
Combine eggs, salt, nutmeg, cayenne, and cream.
Whip until smooth and light in consistency. Spread onions, tomatoes,
and chilies on bottom of pie crust.
Pour egg mixture over filling. Sprinkle with cheeses. Bake 375 F,
60-70 min or until toothpick inserted near center comes out clean.
Allow to cool 10-15 min before cutting. |
Despite the colorful legends, the term jack-o'-lantern originally meant a night watchman, or man with a lantern, with the earliest known use in the mid-17th century; and later, meaning an ignis fatuus or will-o'-the-wisp. In Labrador and Newfoundland, both names "Jacky Lantern" and "Jack the Lantern" refer to the will-o'-the-wisp concept rather than the pumpkin carving aspect.

CROCKPOT PORK CHOPS
6 Boneless pork chops, browned
1/4 cup Brown sugar
1/2 tsp Ground cinnamon
8 oz Can tomato sauce
Can of Peaches
1/4 cup Syrup from drained Peaches
1/4 cup Vinegar
COMBINE:
Salt & pepper pork chops to taste, place in crock pot.
Place peaches on top of the chops, then pour mixture over.
Cover, cook on LOW 4-6 hours.

GOODY FOR GOODIES
Crock Pot Pizza
1 1/2 pounds Ground beef
4 ounces Cheddar cheese -- grated
1 Onion -- chopped
4 ounces Mozzarella cheese -- grated
14 ounces Pizza sauce
14 ounces Spaghetti sauce
6 ounces Pepperoni -- sliced
12 ounces Noodles
Mushrooms
Green peppers
Brown ground beef and onions. Drain grease. Add sauces. Simmer. Boil noodles till al dente; drain. You do not want the noodles to be soft. In crock pot, put a layer of sauce, noodles, meat/sauce mixture, cheeses, pepperoni and as much mushrooms and green peppers as desired. Original recipe I had said to repeat layers one more time, but I repeated layers a few times more. Cook on high for 30 minutes and then on low for 1 hour (I cooked on low for 2 hours), or until cheese melts.
Can be made in a deep casserole dish in the oven at 350~F until cheese melts.

GOODY FOR GOODIES
CHOPS ON THE BBQ
Marinade
8 tbsp fresh lemon juice
3 tbsp soy sauce
1 tbsp extra virgin olive oil
½ tsp light brown sugar
¼ tsp chopped fresh rosemary
¼ tsp salt
¼ tsp freshly ground black pepper
4 pork rib chops, each about 1–1/4 inches thick
Method
- In a medium bowl whisk the marinade ingredients.
- Place the chops in a large, reseal able plastic bag and pour in the marinade. Press the air out of the bag and seal tightly. Turn the bag to distribute the marinade, place in a bowl, and allow to stand at room temperature for 20 to 30 minutes before grilling. Remove the chops from the bag and discard the marinade.
- Sear the chops over direct high heat (450°F to 550°F), with the lid closed as much as possible, for 6 minutes, turning once. Then move the chops over indirect high heat and continue grilling, with the lid closed, until the juices run clear, 4 to 6 minutes. Season with salt and pepper. Serve warm.

ALMOND COOLER
2 cups boiling water
3 Almond herbal tea bags
1 pint Lemon sherbet -- or orange sherbet
Pour the boiling water over tea bags. Let stand for 5 minutes. Remove tea bags; discard. Chill tea for at least 2 hours. At serving time, spoon sherbet into 4 chilled glasses, pour in chilled tea.
One piece of log creates a small fire, adequate to warm you up, add just a few more pieces to blast an immense bonfire, large enough to warm up your entire circle of friends; needless to say that individuality counts but team work dynamites. ~Jin Kwon

DESSERT Keep it simple.
Dessert Cups – package has about 6to 8 (we used the Angel Food cups from Co-Op)
Whipped cream – spray, frozen or make your own.
Bananas - 2
Strawberries – 1 package
Sugar – handful for simple syrup
Clean and quarter strawberries. Add a handle of sugar and stir. Put in a closed container in the fridge for at least 1 hour. You will have strawberries in simple syrup.
Slice bananas so they can be eaten in 1 bite.
To arrange: 1st fruit cup, then bananas, then strawberries with some syrup, then top with whipped cream. You can sprinkle with a little cinnamon if you like.
Shin: a device for finding furniture in the dark.

Rosemary Potato Wedges With Salsa
*Red Salsa
1 red bell pepper -- seed and chop
2 large tomatoes -- seed and chop
1/2 cup minced red onion
1/4 cup chopped cilantro
3 tablespoons fresh lime juice
2 cloves garlic -- minced
1/4 teaspoon salt
*Potatoes
20 ounces potatoes -- one per serving
1 tablespoon dried rosemary – crumbled
1/2 teaspoon chili powder
Red Salsa: Toss all ingredients in bowl. Taste and adjust seasonings. Cover salsa and refrigerate until ready to serve.
Potatoes: Scrub Cut into quarters lengthwise. Spray potatoes with non-stick cooking spray or coat with olive oil. Mix rosemary and chili powder together. Rub potato wedges with seasonings.
Spray grill rack or wipe with cooking oil and place it on grid over ashen-hot coals. Works on a gas BBQ too, just make sure to coat the grill with oil so the potatoes don’t stick. Grill potato wedges -- turning as necessary, until potatoes are crusty and cooked through.
Serve potatoes on individual plates, and pass salsa.

EGGSQUISITE EASTER BASKETS
Yield: 4 baskets
4 Shredded wheat biscuits (crumbled)
3/4 c Peanut Butter
3/4 c Butterscotch chips
Mix peanut butter and chips over low heat or place in microwave until melted. Add shredded wheat. Cool slightly, then mold into baskets - wonderfully yucky! Try shaping over back of bowl. Place baskets in fridge to set.
Fill nests with Easter eggs and/or candy. Little nests filled with
jellybeans are delightful.

PIZZA FONDUE From Optimist Brent
½ pound bulk Italian sausage, cut into small pieces
2 jars meatless pasta sauce
4 oz. thinly sliced ham, finely chopped
1 pkg. (3 oz) sliced pepperoni, finely chopped
Cook and stir sausage and onion in large skillet over medium heat until sausage is browned. Drain and discard fat. Transfer mixture into crock pot. Add pasta sauce, ham and pepperoni. Cover and cook on low for 3 – 4 hours.
Suggestions for dipping: Garlic bread cut up, mozzarella cheese, peppers, and mushrooms or even pre-cooked large pasta.

Amount Measure Ingredient -- Preparation Method

6 tablespoons Butter or Margarine -- Softened 2/3 cups Sugar
2 each Eggs -- Large
1/4 cup Milk
1 teaspoon Vanilla
1/2 cup Flour -- Unbleached
1 package Chocolate Pudding Mix -- *
1/2 teaspoon Baking Powder
1/4 teaspoon Salt
1/2 cup Nuts -- Chopped
Powdered Sugar
* Chocolate pudding should be a 3 3/4 to 4 oz package of REGULAR pudding mix.

Cream butter and sugar. Blend in eggs, milk, and vanilla. Stir together flour, pudding mix, baking powder, and salt. Add to creamed mixture; mix well. Stir in nuts. Spread in greased 9 X 9 X 2-inch baking pan. Bake at 350 degrees F for 25 to 30 minutes. Cool. Sift powdered sugar over top, if desired. Cut into bars. Makes 24 brownies.

Lemon-oatmeal crispies
Categories: Diabetic, Desserts, Rice, Cookies
Yield: 36 cookies
2/3 cup vegetable oil
2/3 cup brown sugar
1/2 cup egg whites
2 tbsp lemon juice
2 tbsp grated fresh or finely chopped dried lemon rind
1 tsp lemon flavouring
1 cup all-purpose flour
1 cup rolled oats
1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 cup crispy rice cereal;
Place oil and brown sugar in a mixer bowl in a mixer bowl and mix at medium speed until creamy. Add egg whites, lemon juice, rind and flavouring, and mix at medium speed to blend well. Stir flour, oatmeal, baking powder, and baking soda together to blend well; add to creamy mixture while beating a medium speed. Stir in cereal. Drop by the tablespoonfuls on to cookie sheets left ungreased or lined with aluminum foil. Bake at 350 for 8 to 10 minutes, or until cookies are lightly browned. Remove them to a wire rack and cool to room temperature.
